香淋白菜
描述
大白菜具有清熱、利尿、降血壓、預防感冒等食療功效,天冷時又是大白菜的盛產季節,品質也好。
這道白菜料理的烹飪方式簡單,吃得到大白菜的脆與爽口。

步驟

大白菜用水清洗乾淨 Wash cabbage with water

清洗後,將大白菜切成粗條狀 After washing, cut the cabbage into thick strips

加入1大匙鹽 add 1 tbsp salt

用手將大白菜及鹽抓拌均勻,之後靜置醃漬1小時 Mix the Chinese cabbage and salt evenly with your hands, then let stand for 1 hour

1小時後,取部分白菜握在手掌,用力擠壓將苦水擠乾淨 After 1 hour, take part of the cabbage and hold it in the palm of your hand, squeeze hard to squeeze out the bitter water

胡蘿蔔切成細絲 shredded carrots

嫩薑片切成細絲 Thinly sliced ginger

將切好的薑絲及胡蘿蔔絲跟大白菜一起放入碗中 Put the sliced ginger and carrots into a bowl together with the Chinese cabbage

加入1大匙糖 add 1 tablespoon sugar

加入1大匙白醋 Add 1 tablespoon white vinegar

將所有材料攪拌均勻 Mix all ingredients well

鍋中加入香油及花椒,用小火加熱至花椒香味出來即關火 Add sesame oil and peppercorns to the pot, heat on low heat until the aroma of peppercorns comes out, then turn off the heat
