這是個外酥內軟,口感扎實又健康的的貝果食譜.

份量9人份 烹調時間180分鐘

食材

warm water (110 degrees F/45 degrees C) 1 1/2 cup
salt 1 1/2 teaspoons
white sugar 2 tablespoons
bread flour 2 cups
whole wheat flour 1 cup
active dry yeast 2 1/4 teaspoons
boiling water 3 quarts
white sugar 3 tablespoons
olive oil -
chia seeds 3 tablespoons
  • 1 Place water, salt, sugar, flour and yeast in the bread machine pan in the order recommended by the manufacturer. Select Dough setting. 把溫水,糖,鹽,麵粉和快速酵母,一起放進麵包機(沒麵包機也可以手揉到表面光滑成團),揉團並發酵到兩倍大.約90分鐘.
  • 2 When cycle is complete, let dough rest on a lightly floured surface. 把麵團放在灑了一點麵粉的工作檯上.
  • 3 Cut dough into 9 equal pieces, and roll each piece into a small ball. Flatten balls. Poke a hole in the middle of each with your thumb. Twirl the dough on your finger or thumb to enlarge the hole, and to even out the dough around the hole. Cover bagels with a clean cloth, and let rest for 90 minutes. 麵團分為9等份,揉成圓型後壓扁,用手指從中間打洞,整成貝果形狀,放在烤盤上,進行第二次發酵,約90分鐘
  • 4 preheated 375 degree F (190 degrees C) oven . In a large pot bring 3 quarts of water to a boil. Stir in 3 tablespoons of sugar.Carefully transfer bagels to boiling water. Boil for 1 minute, turning half way through. Drain briefly on clean towel. Arrange boiled bagels on baking sheet. Glaze tops with olive oil, and sprinkle with your choice of toppings.(chia) 預熱烤箱375F(190C), 煮開3公升的水,加入3大匙糖,小心的把麵糰放進滾水煮30秒,翻面再30秒,撈起來,放在乾淨的毛巾上吸水,再拿起來放到鋪了烤紙的烤盤上.上面抹油(奶油,橄欖油....都可以,是為了上色)再灑上你想加的東西,如芝麻粒或奇異子.
  • 5 Bake in a 375 degree F (190 degrees C) oven for 20 to 25 minutes, until well browned. 烤20到25分鐘,直到你想要的顏色完成.
