蜜地瓜
描述
天氣愈來愈涼,就想吃些暖熱、甜糯的地瓜。
地瓜富含膳食纖維、維生素B6、維生素C、葉酸、鈣質、鉀及β-胡蘿蔔素等眾多營養。 膳食纖維有益腸胃健康、防便祕及腸道病變。 另外,地瓜所含β-胡蘿蔔素能夠幫助抗癌,且地瓜中所含的維生素C,因為有澱粉包裹,較能穩定地存在,被人體所吸收。 地瓜所含的葉酸、黏性蛋白質等成分,可以防止血管硬化,預防心臟疾病,相當有益心臟健康。

將500cc水跟20g鹽混合成鹽水 Mix 500cc of water with 20g of salt to make brine

地瓜去皮 peeled sweet potatoes

將地瓜放入鹽水浸泡20分鐘,這樣可以避免地瓜變黑 Soak the sweet potatoes in salt water for 20 minutes, this will prevent the sweet potatoes from turning black

20分鐘後用清水將地瓜清洗一遍,然後瀝乾水份 After 20 minutes, wash the sweet potatoes with clean water, then drain the water

鍋中加入500cc水及200g二砂糖、200g麥芽糖 Add 500cc water, 200g two sugar, 200g maltose to the pot

蓋上鍋蓋,小火熬煮50分鐘-1小時,不要翻動地瓜 Cover the pot and cook on low heat for 50 minutes to 1 hour, do not turn the sweet potatoes

用牙籤或叉子插入地瓜,確認地瓜是否都已經熟了 Use a toothpick or a fork to insert the sweet potatoes to make sure they are all cooked

熬煮時,糖水會溢到盤子裡,中途要檢查,並將盤子裡的糖水倒回鍋中
第一次煮怕糖水太少煮焦的話,可以用二砂糖1:麥芽糖1:水2.5cc的比例增加一點糖水量
