鍋中放入600cc水、10顆話梅、45g糖及45g麥芽糖。 Put 600cc of water, 10 plums, 45g of sugar and 45g of maltose into the pot.

開火,將糖及麥芽糖煮至溶解。放涼備用。 Turn on heat and cook sugar and maltose until dissolved. Set aside to cool.

苦瓜去除瓜囊,並用湯匙將內膜刮除。 Bitter gourd remove the sac and scrape the inner membrane with a spoon.

切成略帶透明的薄片。 Cut into slightly transparent slices.

將苦瓜片放入冰水中,稍微抓拌後,放入冷凍庫冰鎮30分鐘。 Put the bitter gourd slices in ice water, stir a little, then put it in the freezer to chill for 30 minutes.

30分鐘後,取出苦瓜,將冰水倒掉。 After 30 minutes, take out the bitter gourd and pour out the ice water.

將冷卻的梅子汁倒入裝有苦瓜的碗中。 Pour cooled plum juice into bowl with bitter gourd.

用保鮮膜包入碗口,放冰箱冷藏浸漬一天,即可食用。 Cover the bowl with plastic wrap, refrigerate and soak for a day before serving.
小撇步
涼拌的苦瓜,建議要使用白色的苦瓜,苦澀味比較沒那麼重。
冷藏浸漬的時間越久,苦瓜會越入味。但從浸漬開始至食用完畢,時間建議不要超過5天。
