【照燒五部曲 第五部 】魚露照燒/雞腿

有吃過泰式雞腿嗎?
但你一定沒吃過這麼入味的濃厚酸辣口味,配白飯超級搭,一不小心就會多吃上幾碗飯。
步驟

去骨雞腿肉兩片,將筋膜切斷 2 boneless chicken thighs, fascia cut off

雞皮用刀戳洞 poking holes in chicken skin

用廚房紙巾擦乾雞身上的水份 Dry the chicken with kitchen towels

調魚露照燒醬~米酒2大匙 Fish sauce teriyaki sauce ~ rice wine 2 tbsp
-
蜂蜜2大匙 2 tbsp honey
-
魚露3大匙 3 tbsp fish sauce
-
檸檬汁4大匙 4 tbsp lemon juice
-
水2小匙 2 tsp water
-
辣椒圈也放進來 Put the chili rings in too

攪拌均勻後醬汁就調好了 After mixing well, the sauce is ready

鍋熱加入少許油,將雞腿肉雞皮朝下,中火煎 Heat the pan, add a little oil, put the chicken thigh skin down, and fry on medium heat

煎到兩面金黃 Fry until golden on both sides

用廚房紙巾將雞腿肉上多餘的油份吸掉 Use a kitchen towel to absorb excess oil from the chicken thighs

鍋中的油也擦乾淨 Wipe off the oil in the pan

將雞腿肉放回鍋中,倒入魚露照燒醬汁 Return the chicken thighs to the pan and pour over the fish sauce teriyaki sauce

小火滷煮,並不斷用湯匙舀起醬汁淋在雞身上 Bring to a boil over low heat, and keep spooning up the sauce and pouring it over the chicken

滷煮到湯雞收乾得差不多 Stew until the soup chicken is almost dry

將煮好的雞腿肉擺入盤中,用檸檬片及香菜葉裝飾~完成 Put the cooked chicken thighs on a plate, decorate with lemon slices and coriander leaves ~ done
