紅燒鑲豆腐

簡單好吃的豆腐料理

步驟
-
豆腐切成4小塊 tofu cut into 4 pieces
-
中心挖出一個小凹槽 Dig a small groove in the center
-
在豆腐上灑一些太白粉 Sprinkle some taibai powder on the tofu
-
再撒上一些鹽 sprinkle some salt
-
絞肉中加入蔥花及薑末 Add chopped green onion and minced ginger to the ground meat
-
再加入1小匙玉米粉 Add 1 tsp corn flour
-
加2小匙醬油 add 2 tsp soy sauce
-
加1小匙蛋液 Add 1 tsp egg wash
-
順同一方向攪拌絞肉及調料 Stir the ground meat and seasoning in the same direction
-
再摔打出絞肉的筋性 Then beat the muscle of the ground meat
-
將絞打好的絞肉填入豆腐的凹槽中並抹平 Fill the ground meat into the grooves of the tofu and smooth it out

在豆腐上塗上蛋液 Coat egg wash on tofu

鍋熱加入15cc油,先將豆腐有填絞肉那面朝下煎 Add 15cc of oil to the hot pan, fry the tofu with the ground meat side down

豆腐煎至兩面金黃後即可撈出備用 Fry the tofu until golden brown on both sides, then remove and set aside

原鍋再加入10cc油,並放入蒜末炒出香味 Add 10cc of oil to the original pot, add minced garlic and fry until fragrant

加入150cc清水 Add 150cc of water

將煎過的豆腐也放進來 Add the fried tofu

水滾後蓋上鍋蓋燜2分鐘 Cover the pot and simmer for 2 minutes

2分鐘後加入醬油1大匙 After 2 minutes, add 1 tbsp soy sauce

加入糖1小匙 Add 1 tsp sugar

用湯匙舀起醬汁淋在豆腐上,讓豆腐均勻上色 Spoon the sauce over the tofu so that the tofu is evenly colored

湯汁差不鍋收乾後將豆腐盛出 After the soup is almost dry, put the tofu out
-
將剩下的湯汁淋在豆腐上 Drizzle the remaining soup over the tofu
-
撒上蔥花~紅燒鑲豆腐完成 Sprinkle with chopped green onion ~ braised tofu is complete
