步驟

處理雞爪: 1.有些雞掌有疙瘩,可用刀切除。 2.用塩搓淨雞爪,再用水沖洗乾淨。 3.燒一大鍋水,水滾後放入雞爪(水溢過雞爪),中火煮30分鐘。 4.撈起雞爪,沖冷水。 5.可剖半(更入味),也可剪去指甲,備用。 ※雞湯可保留,之後煮湯用。(我是拿來煮咖哩)

Process chicken feet: 1.Trim the swelling(bumps). (might not apply) 2.Rub with salt, then rinse with water.. (deep clean)

3.Prepare a large pot of boiling water, add chicken feet (water overflow feet), mid-heat cook for 30 mins)

4.Scoop up chicken feet, rinse with cold water. 5.Cut in half each of feet(bake into the center), also can remove the nails.

※You can save the chicken stock for other using.(I gonna to reserve for curry)

滷雞爪: 1.紅辣椒洗淨、切丁,九層塔洗淨、切碎,蒜頭去皮切成末。 2.大鍋大火,下花椒粒、乾辣椒(捏碎),乾炒10秒。 3.下油、蒜頭、冰糖、雞爪,炒到冰糖略融,雞爪油亮。 4.下醬油、水、八角,轉中火略拌炒(煮到滷汁收乾)。 5.滷汁快收乾前,加入紅辣椒、九層塔拌匀。 起鍋,完成!

Stewing: 1.Rinse red chilli and basil, then dice them. Mince garlic.

2.Use wok in high-heat, add dried wild pepper and crushed dried chilli pepper to the wok and stir fry for 10 seconds.

3.Add oil, garlic, crystal candy and chicken feet, stir fry untill crystal candy slightly melting and feet shiny.

4.Add soy sauce, water and star anise, use mid-heat cooking (until the juice was absorbed) 5.Add red chilli and basil, mix will. Ready to serve.
