百香果雪酪

描述
百香果的季節來了,酸酸甜甜的百香果,做成冰品更好吃。
百香果有「果汁之王」美稱,它的金黃色澤來源是「類黃酮」,有很好的消炎作用,能改善過敏、牙周炎;百香果還含有豐富的維生素B、C、葉酸、多酚類,能保養血管、暢通血液、提高鐵的吸收,改善貧血、防止動脈硬化,更有抗老、抗氧化的效果。
步驟

將百香果果肉挖出秤重,這次使用的百香果有900g重。 Dig out the passion fruit pulp and weigh it, the passion fruit used this time weighs 900g

200g細砂糖跟200cc水倒入鍋中,小火煮至糖溶解。 Pour 200g of caster sugar and 200cc of water into a pot, cook on low heat until the sugar dissolves.

10g明膠加入70cc水,泡發後以600W微波加熱30秒。 Add 70cc of water to 10g of gelatin, and microwave at 600W for 30 seconds after foaming.

百香果加入放涼的糖液,一邊加入一邊攪拌。 Add the passion fruit to the cooled sugar liquid, stirring as you add.

在碗下墊盆冰水,再加入明膠水,持續攪拌至果汁摸起來冰冰的 Place a basin of ice water under the bowl, then add the gelatin water, and stir until the juice is ice-cold to the touch.

完成後,以保鮮膜包住碗口,冷凍2小時。 When done, cover the bowl with plastic wrap and freeze for 2 hours.

2小時後取出,用攪拌器將冰晶打碎。之後再冷凍3小時。 After 2 hours there is already thin ice, break up the ice crystals with a blender. Freeze for another 3 hours after that.

3小時後,碗邊已經有一層冰晶,用刮刀將邊緣的冰刮起。 After 3 hours, there is a layer of ice crystals on the sides of the bowl, use a spatula to scrape the ice around the edges.

再用攪拌機混合冰晶與果汁,之後將碗口包住,再冷凍2小時。 Mix the ice crystals and juice with a blender, then cover the bowl and freeze for an additional 2 hours.

2小時後,碗邊冰晶更多了,一樣先刮起邊緣冰晶。 After 3 hours, there are more ice crystals on the side of the bowl, so scrape the edge ice crystals first.

之後再用攪拌機混合以結晶的冰晶跟果汁,之後再冷凍4小時。 Then use a blender to blend the crystallized ice crystals and juice, then freeze for 4 hours.

4小時後,大部分果汁已經結晶,最後一次翻起冰晶。 After 4 hours, most of the juice has crystallized, flip the ice crystals one last time.

再一次將冰晶打碎。重複結晶及打碎冰晶的動作,可以讓下次結晶的冰晶更細緻。 Break the ice crystals again. Repeatedly breaking the ice crystals can make the ice crystals finer.

將打好的冰泥倒入準備好的玻璃保鮮盒。 Pour the whipped slush into the prepared glass crisper.
