  • gently mix the flours, sugar/honey, salt, and baking powder with a spatula

  • mix in vanilla extract, olive oil, and eggs

  • then the chocolate chips and walnuts (broken into small pieces)

  • place the cookie dough into the fridge to chill for about 15 minutes

  • 1 tbsp, bake at 160C for 17 min 2 tbsp, 7cm in diameter, makes 15 cookies, bake at 160C for 25 min

  • remove them from the oven when they feel slightly hard when poked with a chopstick on the sides and soft everywhere else

  • after baking, remove them from the tray makes softer cookies. optional to just leave them to cool on the tray to set

bake at 160C for 2 min before eating them softens their insides
