gently mix the flours, sugar/honey, salt, and baking powder with a spatula

mix in vanilla extract, olive oil, and eggs

then the chocolate chips and walnuts (broken into small pieces)

place the cookie dough into the fridge to chill for about 15 minutes

1 tbsp, bake at 160C for 17 min 2 tbsp, 7cm in diameter, makes 15 cookies, bake at 160C for 25 min
-
remove them from the oven when they feel slightly hard when poked with a chopstick on the sides and soft everywhere else
-
after baking, remove them from the tray makes softer cookies. optional to just leave them to cool on the tray to set
