【香菇豆腐湯】湯頭鮮甜濃郁,營養豐富

步驟

豬絞肉、蔥末、薑末放入碗中,加入1小匙醬油 Put the minced pork, minced green onion, and minced ginger into a bowl, and add 1 tsp soy sauce

豬絞肉與蔥、薑及醬油拌勻後,揉摔至絞肉產生黏性 Mix the minced pork with green onions, ginger and soy sauce, then knead until the minced meat becomes sticky.

四季豆切1公分小段 Cut green beans into 1cm pieces

紅蘿蔔切小丁 Dice carrots

香菇切小丁 Dice mushrooms

豆腐切小丁 Cut tofu into small cubes

鍋中倒入少許油,放入紅蘿蔔及香菇炒香 Pour a little oil into the pot, add carrots and mushrooms and stir-fry until fragrant

在放入豆腐丁,並輕輕將豆腐推開 Add the diced tofu and gently push the tofu apart

倒入水,至沒過所有材料 Pour in water until all ingredients are covered

水滾後,利用手及湯匙將絞肉整形成小團,輕輕放入鍋中 After the water boils, use your hands and a spoon to shape the minced meat into small balls and gently put it into the pot.

蓋上鍋蓋,中火煮5分鐘 Cover the pot and cook over medium heat for 5 minutes

放入四季豆,再煮5分鐘 Add the green beans and cook for another 5 minutes

加入1小匙鹽調味 Add 1 tsp salt to taste

再用白胡椒粉提味 Add white pepper to enhance the flavor

試試味道,味道可以後,就完成了 Test the taste. Once it tastes good, it’s done.

烹飪重點:
--豬絞肉加入少許薑末或蔥末,可以增加豬肉的香氣
--先將香菇、胡蘿蔔、豆腐炒香,可以讓湯頭更有味道
