【照燒五部曲】 第二部~辣味照燒
描述
辣味照燒,適合用來烹煮雞肉、白肉魚、紅肉魚。
煨煮過的魚肉入口鹹甜入味,細細品嘗~豆瓣的香味在中段顯現,後味再帶出些許辣,有著這道菜,不用擔心家人沒胃口。

鯛魚一片,用廚房紙巾擦乾魚身上的水份 One piece of sea bream, dry the fish with a kitchen towel

調辣味照燒醬:米酒2大匙 Spicy teriyaki sauce: 2 tbsp rice wine

味醂2大匙 Mirin 2 tbsp

醬油1大匙 1 tbsp soy sauce
-
辣豆瓣醬1小匙 1 tsp spicy bean paste

糖1大匙 sugar 1 tbsp

攪拌均勻~辣味照燒醬就好了 Stir well~ the spicy teriyaki sauce is ready

鍋熱,加入少許油,將魚片放入中火油煎 Heat the pan, add a little oil, and fry the fish fillets on medium heat

煎到一面熟並微焦黃後翻面 Fry until one side is cooked and lightly browned, then flip

把另一片也煎熟 Fry the other slice too

將多餘的油倒掉 pour off excess oil

倒入辣味照燒醬,小火煨煮 Pour in the spicy teriyaki sauce and bring to a simmer

用湯匙舀起醬汁淋在魚身上 Spoon the sauce over the fish

煨煮到湯汁大致收乾,就可以關火了 Simmer until the soup is almost dry, then turn off the fire

裝盤後做些裝飾~就完成了 After putting it on the plate, do some decorations ~ it's done
