乾香菇用冷水泡軟 Soak dried shiitake mushrooms in cold water

香菇泡軟後切成小片 Mushrooms soaked and cut into small pieces

雞腿肉切小塊 chicken thigh cut into small pieces

青蔥切小段 shallots cut into small pieces

薑切成薄片 thinly sliced ginger

雞腿肉加入2小匙XO醬 Add 2 tsp XO sauce to chicken thigh

加入1小匙蠔油 Add 1 tsp oyster sauce
-
加入1/2小匙鹽 Add 1/2 tsp salt
-
加入1/2小匙糖 Add 1/2 tsp sugar

加入1/2小匙鰹魚粉或雞精粉 Add 1/2 tsp bonito powder or chicken stock powder

加入2小匙太白粉 Add 2 tsp cornstarch

加入胡椒粉適量 Add appropriate amount of pepper

將雞肉與所有調味料抓拌均勻 Mix the chicken with all the seasonings

再加入1/2小匙米酒,抓拌一下 Then add 1/2 tsp of rice wine, mix well

最後加入1/2小匙麻油 Finally add 1/2 tsp sesame oil

抓拌均勻後醃漬10-15分鐘 Mix well and marinate for 10-15 minutes
