滑蛋蝦仁

描述
蛋滑、蝦鮮,一口一口停不了。

步驟

雞蛋3顆,打散成蛋液 3 eggs, beaten
-
蝦仁用餐巾紙將水份擦乾 Dry the shrimp with a napkin
-
加入1g鹽,抓拌均勻 Add 1g salt and mix well
-
再加入2小匙蛋白 Add 2 tsp egg whites
-
加入1.5g太白粉 Add 1.5g potato flour
-
再次抓拌均勻 Mix again
-
青蔥切成蔥花,蔥白跟蔥綠分開放 The shallots are cut into chopped green onions, and the white and green shall be separated

用1匙太白粉 Use 1 tablespoon potato flour
-
2匙清水,調成太白粉水 2 tablespoons of water, made into potato flour water
-
鍋中加入2大匙油 Add 2 tablespoons of oil to the pan
-
油熱後用油滑一下鍋,再將大部份的油倒出 When the oil is hot, slide the pan with oil and pour out most of the oil

蔥白放入鍋中炒出香味 Sauté the shallots in the pan until fragrant

香味出來後加入蝦仁,炒至蝦仁變色 After the fragrance comes out, add the shrimps and fry until the shrimps change color

再加入清水大約100cc Then add about 100cc of water

加入1匙鹽調味 Add 1 tablespoon salt to taste

接著用太白粉水勾薄芡 Then use potato flour water to thicken thinly

薄芡勾好後,加入一些前面預熱過的油 After the thin glutinous rice is hooked, add some of the preheated oil

再倒入蛋液 Pour in egg

用鍋鏟輕輕翻炒至蛋剛熟 Gently stir fry with a spatula until the eggs are just cooked

然後加入蔥綠,再翻炒一下 Then add green onion and stir fry

將炒好的滑蛋蝦仁倒入盤中~完成 Pour the Slippery Egg Shrimp into the plate ~ done
