比得包Pita bread

每當我想不到主糧做什麼的時候,比得包絕對是上佳、快速、簡單的餐單。假如時間不夠,可省略第二次發酵,只是軟度會稍低。
It makes a great substitution for bread especially when I'm less creative! The 2nd fermentation process can be skipped when kids are starving.

份量5人份 烹調時間90分鐘

食材

酵母yeast 12g
溫水warm water 165g
糖sugar 12g
鹽salt 6g
菜油vegetable oil 45g
高筋麵粉bread flour 290g
奶粉milk powder 10g
  • 1取1大盆,放進酵母、糖和溫水,靜置數分鐘後加入鹽; Dissolve yeast & sugar in warm water in a big container, rest for few mins then add salt.
  • 2加入菜油以筷子混合; Add vegetable oil and mix well with the yeast water.
  • 3加入高筋麵粉和奶粉,用筷子攪拌; Add bread flour and milk powder, mix with chopsticks.
  • 4搓揉麵糰至表面光滑,以濕布蓋著; Knead the dough till its surface is smooth and cover with wet towel.
  • 5按壓麵糰擠出空氣,切割成10個54g的小麵糰,以濕布蓋著,再靜置30分鐘; Press the dough and divide into 10 small equal balls (@54g), cover with wet towel for another 30 mins.
  • 6預熱烤箱至200度。案板上撒高粉,按壓小麵糰,擀平至圓; Preheat oven to 200C. Dust countertop with bread flour, flatten the small ball by pressing, roll out till round.
  • 7烤盤上灑上高粉,把擀好的扁麵糰平均置於盤內; Place each pita on top of floured baking tray.
  • 8烤4分鐘或至金黃。 Bake for 4 mins or till light brown.
  • 9搭配雞豆沾醬或湯品最為適合。 Serve best with hummus dip or soup.
  • 10香極了,是不? Is it fragrant?
