泰式炸豆腐沙拉

炸過的豆腐內部仍保留細嫩的口感,搭配甜豆的脆,及醬料的甜辣,單吃、配飯或當下酒菜,都是最佳選擇

步驟

甜豆筴300公克,用手撕去頭尾及較粗的纖維,然後清洗乾淨 300 grams of sweet peas, tear off the head and tail and thicker fibers by hand, then wash clean

豆腐一塊,切丁 1 block of tofu, diced

煮滾一鍋水,加入一些鹽 Boil a pot of water and add some salt

將甜豆放入煮熟 put the sweet beans into the boiled

煮熟後撈起,瀝乾水份 After cooking, remove and drain

油鍋,加熱到放入竹筷後,筷子周邊會快速起小泡泡 Heat the oil pan until the bamboo chopsticks are put in, small bubbles will form around the chopsticks quickly

把豆腐放入鍋中油炸 fry tofu in pan

油炸到豆腐浮起來,且表面有微微的金黃,就可以了 Deep-fry until the tofu floats and the surface is slightly golden, that's it

炸好的豆腐夾出放到舖有廚房紙巾的盤中 Remove the fried tofu and place on a plate lined with kitchen towels

朝天椒一條,切末 One Chaotian pepper, minced

泰式酸甜醬4大匙,加入裝有朝天椒末的碗中攪拌均勻 4 tablespoons of Thai sweet and sour sauce, add to the bowl with Chaotian chili powder and mix well

將豆腐、甜豆及調好的醬汁拌勻 Mix the tofu, sweet beans and prepared sauce
