蔥雞湯~
描述
青蔥雖然常見為料理中的配角,但蔥的營養價值卻相當高;以中醫觀點而言,蔥的屬性偏溫熱,依據蔥白、蔥綠和蔥鬚等部位而有不同的保健效果。像是青蔥富含有蒜素、抗氧化物烯丙基二硫醚等營養,不僅有殺菌抗菌、通關節、止血的作用,對於清除自由基、調節免疫力亦有不可小覷的作用。
這道蔥雞湯,做法簡單又美味,快感冒時喝一碗,舒服又美味。

步驟

雞腿肉雞皮朝下放入已加熱的鍋中,無須放油 Put the chicken thighs, skin-side down, into the heated pan, no oil needed

將雞皮表面煎至金黃酥脆後取出切塊 Fry the chicken skin until golden brown and crispy, then remove and cut into pieces

將切成塊的雞腿肉放回鍋中 Return the diced chicken thighs to the pot

加入些許蒜末 add some minced garlic

將雞肉與蒜末拌炒均勻 Stir fry chicken and minced garlic

加入熱水,帶水滾後煮2-3分鐘 Add hot water, bring the water to a boil and cook for 2-3 minutes

再加入1小匙鹽 Add 1 tsp more salt

1/2鰹魚粉 1/2 bonito powder

適量胡椒粉 Appropriate amount of pepper

碗中倒入蔥末 Put onion in bowl

加入的水一定要是熱水,因為加入冷水會讓雞肉溫度瞬間降低,口感反而會變柴
