自製河粉,牛肉炒河粉

Homemade 炒河粉,港式。Homemade chao fun noodles with beef. Very yummy!

Mix rice flour, tapioca starch, arrowroot starch (can use tapioca starch as a replacement), oil, and water together. Let sit 15 mins.

Pour mixture into a oiled metal pan. Place metal pan directly into a large pot of boiling water in a wok so it floats.

Cover wok and let cook 4-5 mins

Once cooked, remove pan from wok using tongs. Place 河粉 into oiled cutting board.

Repeat process a few times. Once cooled, cut into thick strips.

Separate each of the layers into individual noodle strands.

Marinate beef with a little soy sauce, corn starch, oil. Poach the bok choy in water briefly. Fry the beef.

Add noodles and 蠔油,醬油,水 mixture. Mix well by tossing wok. Add vegetables and cook briefly. Serve immediately.

Unless you have a very flat stove, no need for a steaming tray. Place the pan with the rice mixture directly on the water. This makes for an even layer.
