孩子學校家教會每逢新春都為家長舉辦賀年食品示範,我今年應邀教授此糕,於是找母親取經去,想不到一試就行,真不賴!
I was invited by PTA to teach this cake before CNY, so I had my mother taught over the phone and finished nicely with friends' full support.

    馬蹄洗淨,瀝乾; Clean the chestnuts, rinse.

    削皮,切粒; Peel first, then dice.

    水A與馬蹄粉拌勻備用; Mix water A with chestnut powder, stir and set aside.

    片糖和水B放進大鍋以中火煮溶,並輕輕攪拌,等待完全溶化; Melt brown slab sugar with water B in a deep pan, stir.

    轉慢火,再一次拌勻馬蹄水,然後將之逐少加入大鍋並快手拌勻; Stir again the chestnut water before adding to the sugary water, with low fire on.

    粉漿呈白色時加入馬蹄粒; When the paste turns to slightly white, add chestnut pieces in.

    9寸盤子抹油,開中大火; Grease the 9" stainless container with medium fire.

    趁熱把粉漿倒入蒸盆內,抹平表面; Pour in while it is still hot, smooth the surface.

    大火蒸25-30分鐘至透明; Steam it for 25-30 mins till transparent.
