蜜藕-復刻甄嬛傳宮廷點心

描述
蜜藕~是甄嬛傳中,華妃的翊坤宮常備點心,皇上也很愛吃這道點心。
蓮藕有好運連連,連年有餘的寓意,是很適合過年吃的點心。
中醫的觀點~蓮藕具有生津、止血化瘀、安神生智、健脾開胃的效果,最適合乾燥的冬季食用。

藕節洗去泥土 Wash the lotus root to remove the dirt

削去蓮藕的外皮 Peel off the skin of the lotus root

切成0.2公分-0.3公分的薄片 Cut into thin slices of 0.2cm-0.3cm

切好的藕片泡入水中,防止變黑及洗去多餘的澱粉 Soak the cut lotus root slices in water to prevent blackening and wash away excess starch

將藕片排入可放入電鍋也可用瓦斯爐加熱的鍋子 Put the lotus root slices into a pot that can be put into an electric pot or can be heated by a gas stove

加入800cc清水(足以沒過藕片即可) Add 800cc of water (enough to cover the lotus root slices)

電鍋放入低網架 Put the electric cooker on the low rack

外鍋倒入350cc清水 Pour 350cc of water into the outer pot

放入裝有藕片的鍋子,蓋上鍋蓋,壓下開關,進行第一次蒸煮 Put in the pot with lotus root slices, cover the pot, press the switch, and start the first steaming

蒸煮完,在藕片中加入冰糖 After steaming, add rock sugar to lotus root slices

外鍋再次加入350cc清水,蓋上鍋蓋,壓下開關,進行第二次蒸煮 Add 350cc of water to the outer pot again, cover the pot, press the switch, and start the second steaming

蒸煮完成,取出藕片,靜置糖漬一晚 After the cooking is complete, take out the lotus root slices and let them stand for one night

隔天用小火將糖水煮至變濃稠 (用筷子夾取藕片有黏稠的掛糖感即可) Boil the sugar water over low heat the next day until it thickens

準備烤盤,鋪上烤盤紙後,將藕片排上去 Prepare the baking tray, spread the parchment paper, and arrange the lotus root slices on it

第一次烘烤~放入預熱到150度烤箱,烘烤30分鐘。 Baking for the first time ~ Put it in a preheated oven at 150 degrees and bake for 30 minutes.

翻面完成再次放入烤箱烘烤20分鐘,溫度設定為130度 Flip over and bake again in the oven for 20 minutes at 130 degrees
