家裡老人牙齒不好喜吃菜心嫩葉,與其丟棄老的硬的,不如拿來剁碎做餡兒,既不浪費,又可增添纖維,促進腸胃吸收。
Save the outer part of the green choisum, it is still nutritious. The homemade dumplings look attractively green!

    把一斤菜心最外兩層的比較硬但依然新鮮的葉子摘下,洗淨,瀝乾; Peel the outer part of Choisum which looks still fresh, clean and rinse.

    把綠色部分加350克水打成汁; Blend the pure green part with 350g water.

    過篩,使勁按壓取出310克純汁液,最後還要用手搾乾水分; Seize and press hard the spatula to get 310g juice, you might need to squeeze with a hand at the end.

    加入少許鹽和油於菜汁; Add little salt and oil into the vegi juice water.

    加入麵粉,先以筷子攪拌,再移到案板用手搓揉; Add flour, mix with chopsticks in the beginning then transfer to countertop and knead well.

    至表面光滑後蓋蓋和麵(愛地球,別使用保鮮膜); Rest for a while to let all ingredients incorporate well, cover with a lid instead of cling film which will damage the earth.

    準備醃料,多寡隨心所欲; Add ingredients properly according to your experience.

    豬肉與醃料混合後加入搾過汁的菜渣和剁碎的菜白; Mix well the meat with marinade ingredients with chopsticks and continue mixing the chopped vegetables.

    麵糰留起一半待用,搓成長條; Take half from the dough and roll out to a long strip.

    擀薄皮,包餡兒; Roll out to thin skin and wrap your own type.

    餃子包好,燒半鍋水,加鹽,水滾放餃子,搖一搖鍋預防餃子黏鍋底,預備3杯水; When your portion is ready, boil water by adding some salt, prepare 3 cups of extra water.

    滾起,加第一杯水;再滾起加第二杯水;又滾起加第三杯水;再滾,撈起享用。 When it boils, add the 1st cup of water. Repeat the same step till water is used up. Ready to serve when it boils.

    吃不完的可以雪藏; Freeze those for next enjoyment!

    半小時後,吃點水果也不為過。 A coffee lover has to skip her coffee this time.

餡兒的份量可做大約45個餃子,剩餘的麵糰可以做麵條。
About 45 dumplings can be produced. The remaining dough can be used to make noodles.
想著出來的效果再軟點,可加第四杯水多煮一煮。
Add one more cup of water to boil for tenderer result.
