Everybody loves fried rice. Most restaurants make pork fried rice, but I found salmon to go well with rice and onions. In addition, black rice makes this playful version more healthy and colorful.

  • Green onions are a must have in all my fried rice dishes. My kids love the spicy taste so I use jalapeno, but you can use green pepper instead.

  • Preheat pan till water drops scatter. Place salmon in the pan and cover it. Turn heat down to medium for 3 minutes.

  • Move salmon to the side and spread oil around the pan. Add onions, green onions, and carrots and cover for about 1 minute or until it is fragrant.
