Everybody loves fried rice. Most restaurants make pork fried rice, but I found salmon to go well with rice and onions. In addition, black rice makes this playful version more healthy and colorful.

yellow squash

jalapeno

    Rinse rice and cook it using the instructions of your rice cooker. I will soak the black rice for 4 hours before cooking.

    Green onions are a must have in all my fried rice dishes. My kids love the spicy taste so I use jalapeno, but you can use green pepper instead.

    Chop all the vegetables into tiny pieces.

    Preheat pan till water drops scatter. Place salmon in the pan and cover it. Turn heat down to medium for 3 minutes.

    Move salmon to the side and spread oil around the pan. Add onions, green onions, and carrots and cover for about 1 minute or until it is fragrant.

    Break salmon into pieces and stir all the ingredients. Then add the faster cooking ingredients like zuchini and jalapeno and cover for 3 minutes.

    Season cooked ingredients with salt and black pepper.

    Put the cooked rice on top of the cooked ingredients. Add soy sauce for flavor.

    Stir the rice and ingredients together and cover. Cook for another 3 minutes and let all the ingredient's flavor go into the rice.

    It's done. I love the color and the flavor of salmon and green onion is awesome. Enjoy!
