  • Lightly whisk the egg

  • Add soy sauce (1 tsp) & green onion (1 tsp) then mix it

  • Add oil to pan with medium high heat for a minute or two

  • Cover with lid for a minute or two

  • Use a plate to cover and flip the pan (find it easier for me. Can slide the egg back to the pan to cook the other side, if prefer).

- Starting to use avocado oil in cooking that may produce higher heat.
- Pour warm water into pan and cover with the lid after cooking, I found it easier to clean afterward.
