黃金糕Golden cake

幾年前麵點王不再售賣黃金糕以後,偶爾在山姆看得見,不過一段時間沒去,就再也不見有了。怎麼辦?只好到處找食譜,然後改良,16年在學校新春賀年食品示範環節裡與家長們分享了。
This is again one of my daughter's favourite food. My son claimed that I have baked for more than 20 times, gosh!

步驟

椰汁加鹽小火煮5分鐘,放入牛油熄火; Low heat coconut milk and salt for 5 mins, add butter after turning it off, let cool.

另一小碗酵母加水拌勻作發酵之用; Mix ingredients under (B), set aside.

稱好木薯粉和粘米粉; Prepare ingredients under (C).

篩進大盆裡; Sift (C) into a big container.

步驟1的椰汁放涼後加入木薯粉和粘米粉徹底攪勻; After cooling down mixture (A), add in (C), mix well, we call it mixture (D).

用打蛋器打散大盆内的雞蛋,加砂糖輕輕拌勻; Whisk egg and sugar.

攪拌到砂糖溶解,打至發白; Beat (E) till fluffy.

把酵母水和椰汁粉漿倒入蛋漿的大盆內; Pour mixture (A) and (D) into (E).

用打蛋器繼續打數分鐘至拌勻; Whisk for several mins.

每隔15分鐘用打蛋器打發一次,打幾分鐘,重複3次; Beat the whole mixture every 15 mins, repeat 3 times.

焗盤抺上牛油,倒入糊漿再發酵1倍大,約1小時(冬天則放進約40度的焗爐發酵); Grease the baking pan, rest for another hour.

只開下火180度,放入焗爐最下格,焗15分鐘; Heat the oven with only low heat on, after the oven light is off, bake for 15 mins.

再加3分鐘開全火至金黄(如無焗爐則大火蒸15分鐘); Turn the upper heat on and bake for 3 more mins.
