3 Eggs omelette is a very filling breakfast. Takes about 20 minutes to prepare, perfect for Saturday morning.

Dice 1/4 onion, 3 slices of ham, 1 tomato. Slice 3 mushrooms. Cut avocado into chucks. Whisk 3 eggs with one teaspoon of salt.

In a pan, put cooking oil, onions and grill until translucent. Add mushroom and continue to grill until mushroom is translucent and onion is golden.

In a pan, melt butter.

Pour in egg mixture, use medium heat to slow cook the egg. While cooking, skim the uncooked egg mixture at the top to the edge of the egg.

Once the egg are cooked, turn the heat to low. Add shredded cheese, ham, onion, mushroom, tomato and top with shredded cheese.

Fold the egg over. Turn off the stove.

Slide the egg to a plate, top with avocado chunks, diced tomato and add chives to garnish.
