Turmeric eggplant

描述
Turmeric powder possess anti-inflammatory effect and can boost digestion. The effects may be enhanced by heating it up, adding black pepper and cooking it with oil. It’s a great match with eggplant.

Slice eggplant and soak it into vinegar water for 15 ~20min

Add oil into the pan and heat it up. Chop garlic and dry red peppers and pan fried them with med-high heat till the garlic turns brown.

Add tumeric powder and make sure it’s well-mixed with oil. (Note that turmeric powder burn out easily)

Add some black pepper. (Human body absorb Turmeric powder when it’s hot and mixed with black pepper and oil)

Let garlic and red pepper sit on the edge of the pan. Pan fried ground pork till med(half done) with med heat.

Let the ground pork sit on the side of the pan. Pour brown sugar and some water then caramelize it with high heat

Add soy sauce and blend all the ingredient. Add eggplant and water. Put the lid on and wait for 5min (med heat).

If the sauce it condensed, then it’s ready to serve. If not, open the lid, use high heat to condense the sauce.
