Clean and cut the bitter gourd.

Put some salt and mix well. Wait 15 mins and raise with cold water

Add 100 ml hot water in Katsuobushi.

Put salt and bitter gourd in boiling water in 30 sec. Rinse with cold water.

Cut the 0.5 cm spam.

Put oil in the hot pan. Mix the eggs. Fried eggs.

Pan fried spam till crispy for both side. Add bitter gourd. Add Katsuobushi broth. Add soy sauce 1 tbsp. Add Mirin 1tbsp. Add egg. Seasame.
