麻婆豆腐 Ma-Po Tofu

步驟

準備所有材料: 豆腐切小塊, 蒜頭, 洋蔥, 紅蘿蔔, 蔥切碎 Prepare all ingredients: Cut tofu into small squares, minced garlic, onion, carrot and green onion.

豆腐用水煮滾之後瀝乾水份. Put cut tofu into a pot and boil with water, then drain the water.

熱鍋下油,用中火先炒豬絞肉炒半熟 (稍稍變白) Heat a wok or a pot over high heat and add a little bit of oil, breaking up lumps, and cook until half white.

下洋蔥, 蒜和紅蘿蔔, 中火炒2分鐘 Add garlic, onion and carrot, stir-fry over moderate heat until very fragrant, about 2 minutes.

下豆瓣醬, 醬油, 糖, 水, 拌勻,煮沸 Add hot bean paste, soy sauce, sugar and water, mix well and bring to boil.

然後下豆腐,輕輕拌勻,不要弄散豆腐 Add tofu, mix very gently, and make sure not to break the tofu apart.

"太白粉水"拌勻後, 慢慢加進鍋裡, 攪拌煮滾. Mix "cornstarch water" well, then add into the pot slowly, mix and bring to boil.

灑上蔥花 Sprinkle green onion.
